Black, crispy, often flat and square - dried seaweed, known locally as gim, is a humble staple on everyday dining tables across South Korea. However, as its global popularity grows, its rising prices are worrying gim-lovers nationwide.

Lee Hyang-ran, who has been selling gim for the past 47 years, notes the change in perceptions. In the past, people from Western countries thought Koreans were eating something weird that looks like a piece of black paper. I never thought I'd be selling gim to them. But now, they all come here and buy it, she shares from her stall in central Seoul.

South Korea is the world's largest producer and exporter of gim, supplying not just Asian markets but also those in North America and Europe. Exports hit record numbers recently, with 2025 sales reaching $1.13 billion, a clear sign of the growing demand.

Traditionally an affordable snack, gim has seen its price per sheet rise from around 100 won ($0.06; £0.05) in 2024 to above 150 won recently, marking a record high. Premium varieties now cost as much as 350 won each.

The rise in demand reflects a broader interest in Korean culture, spurred by K-pop and K-dramas, leading consumers worldwide to seek out Korean cuisine. I first learned about gim because it's a typical Korean food often seen in K-dramas, said Miki, a 22-year-old visitor from Japan.

Businesses are adapting to this trend; however, the pressure of rising prices is noted by local consumers. Kim Jaela, in her 30s, who typically buys gim in bulk, expressed concern over needing to adjust her purchasing habits due to the increased prices.

Experts attribute this price surge to several factors, including inflation and rising production costs, but agree that global demand is a primary driver. The Korean government is monitoring the situation to curb escalating prices and preserve the affordability of this essential staple.

Despite the challenges, the market remains robust, with vendors like Lee witnessing a bustling trade, indicating that while prices rise, the allure of Korean gim continues to captivate consumers worldwide.
